Siam Thai Authentic Cuisine sits on the grounds of Mercedes Country House, surrounded by the countryside that inspired it. Open to hotel guests and outside visitors alike — you don't need to be staying to eat here. You just need a reservation.
The Kitchen
Chef Ray.
Siam is helmed by Head Chef Ray, who brings decades of authentic Thai culinary expertise to the Algarve. Every dish is made from scratch — curry pastes ground by hand, stocks reduced slowly, flavour calibrated by instinct rather than recipe. The result is Thai cooking that is genuinely rooted, not approximated.
The Garden

Siam sits within the grounds of Mercedes Country House, surrounded by countryside and greenery. The kitchen tends its own patch of herbs and plants: Thai basil, lemongrass, galangal, chillies, mint, lemons — and green papaya, the quiet secret behind what may be Portugal's most authentic Som Tum salad.
Eat inside or on the terrace. Either way, you're cocooned in green and Algarve warmth. Evenings here are genuinely unhurried — soft light, cosy tables, and the occasional rooster making himself known from somewhere across the property. The kind of meal you linger over.
